Red Fox Inn, Middleburg, VA & Chef Gordon Wicks

The Red Fox Inn is just west of Fields of Athenry Farm here in Loudoun County. Chef Gordon Wicks is one of my favorite people, and he does so much to promote our farm and the local way of eating. I describe the Chef’s approach to his menu as seasonally rustic and true to the kind of fare that might have been prepared for Virginia Founding Father Thomas Jefferson – it is that authentic, that well connected to our area’s roots. One area reviewer described Chef Wicks’ “inexhaustible desire for the freshest ingredients, presented in simple, yet refined Country Fare.” Famous for its Virginia Peanut Soup and signature Red Fox Crab Cakes, the Red Fox Inn was named a 2010 Loudoun Destination Restaurant. It is well worth it to make this restaurant your destination for a Loudoun County country weekend!

Locke “Modern Country” Store, Millwood, VA & Juliet Mackay-Smith

The Locke Store is a really interesting and historic place. Most describe it as “like no other country store” you have ever experienced – and they are right! This gathering spot, west of Fields of Athenry in historic Millwood, VA, is a combination coffee bar, wine shop, bakery, deli and grocery store that also supplies its customers with “take-out entertaining.” Locke’s menu features all natural beef, pork & chicken and turns these fresh ingredients into wonderful menu items such as Chicken Pot Pie, Butternut Squash Lasagna, and wonderful Fields of Athenry Lamb Sausage dishes! The Washington Post calls the Locke Store’s Mackay-Smith “the linchpin of a hyper-local network of sustainable food production.” Juliet herself notes "People are getting it, this thing about supporting local business and knowing where your food comes from."

Coming out to the farm a huge crew of kitchen chefs from Lansdowne came to learn how and why we operate the way we do – we cooked together, toured the farm, shared stories … it was fun! We love it when the local restaurants that buy our products take the time to come and see “Why we do What we do” as I like to say. It shows a real commitment to us, and the idea of forming close business relationships that benefit both restaurant and small farm. Lansdowne has even made our ground beef into their signature burger! Let me tell you – it takes real Chefs to take lean grass fed ground beef and cook it right without drying it out each and every burger. It takes real BULL to make it their signature burger! There are lots of great restaurants in the area, and many might be suitably described as having “elegant, sophisticated fare.” But Vermillion, which features many Fields of Athenry products, is more than just good – it’s great. Vermilion was named as one of Washingtonian Magazine’s 100 Best Restaurants in 2010 and Northern Virginia Magazine's Top 50 in 2010. It was also chosen as an Editor's Pick for The Washington Post's 2010 Dining Guide and awarded the prestigious 2010 Rammy for Best Upscale Casual Restaurant by the Restaurant Association of Metropolitan Washington.  (It shows they buy from the best … including Fields of Athenry!)

Haute Dog, Purcellville, VA & Lionel Holmes
Haute Dog buys whole Fields of Athenry lamb sausage and kielbasa
This restaurant takes its name from one of America’s most common foods – the hot dog. But Haute Dog is anything but common. Lionel Holmes and his partner Pamela Swanson have worked at some of the best restaurants in the country (including the Four Seasons and Morton’s Steakhouse). The restaurant – one of my family’s favorite haunts since it is right up the road – transforms premium hot dogs, sausages, breads, dressings, condiments, grilled onions (oh my gosh!) into the best meat and a bun concoctions you will ever put in your mouth. When you add a Fields of Athenry nitrate free, no preservatives sausage to a fresh off the grill bun and a pile of Haute’s hand-cut sweet potato fries and you’ll think you have died and gone to heaven.  Haute is a real backyard food gem, with kosher, chic, fast-not-fast-food fare.

"My Chefs” (as I like to call them) have not only made a commitment to Fields of Athenry Farm, but to you.

 
They have set the high water mark (the high farm fence mark!) for menu items that are not only authentically local and healthy, but also innovative and delicious.  Each and every one of these fine restaurants have had their talented teams come out to the farm and learn "Why we do What we do" here at Fields of Athenry. We have invested in them. They have invested in us.  And, together, each of us has invested in your well being.
 
It is from this perspective that these restaurants committ their very best to you and yours. We thank and celebrate them for carrying the message: "You are what you eat.” (Who says nutrient dense eating can’t be the food of kings and queens?)  Try any one of these creative artists of the culinary extraordinaire and experience the ultimate in locally authentic, locally prepared foods.  It takes a real chef to take a healthy, compassionately raised animal, use it from head to toe as God intended, and put on your plate earth's most magnificent ambrosia.  I'm going on and on, but, I need to.  Making "Waste Not – Want Not”, great taste, good health and more the price of entry for their customers (just like we do) is no small feat!
